I usually go with: chop onions, get them on a low heat with ghee and cover, chop 3-4 cloves of garlic, inch cube of ginger. Get spices ready (1tsp cumin, paprika, turmeric, garam masala. 2tsp coriander). After 20 mins, get the garlic and ginger in, leave for 5 mins, add a splash of water if needed and then put the spices in. Couple of mins add chicken, cook a little. Then start adding the base sauce, once all in bring up the heat. Then add 3ish tbsp of tomato paste and a bit of water, still up.
